Can you feel the wind in your glass? That’s because you’re tasting a wine from the Karst!
We look forward to welcoming you to San Dorligo della Valle, at the Parovel winery, for a journey through the aromas and flavours of this border region. You’ll explore the winery’s underground cellars before enjoying a tasting of local wines paired with canapés.
And you’ll discover why the wind adds flavour to every glass!
What we will do
The event will take place at the selected time at the Parovel winery in San Dorligo della Valle (TS), set against the backdrop of the Karst.
We’ll start with a guided tour of the winery’s underground cellars, where the barrel cellar and ageing casks are housed. The guide will tell us the story of the Parovel family, who, since 1976, have been the first in the area to bottle local wines and Bianchera extra virgin olive oil.
We’ll discover the winemaking process and the grape varieties of the Carso-Kras DOC area, such as Istrian Malvasia, Vitovska, Glera and Refosco d’Istria. The winery tour will last around 20 minutes.
Afterwards, we’ll begin the tasting with a welcome glass of Visavì Barde Prosecco DOC Trieste, ideal for preparing the palate for the flavours of this region. We’ll then get to the heart of the tasting, which will take us on a journey through the unique aromas of the Karst and Istria. We’ll discover how each bottle combines the sea breeze and the power of the Bora with the fertile, mineral-rich soil, cradled by the tranquillity of the River Rosandra.
The journey will continue through the indigenous wines of the Carso-Kras DOC area: you’ll be able to indicate your preference and taste two indigenous wines (one white and one red) , choosing from renowned grape varieties such as Istrian Malvasia, Vitovska, Terrano and Refosco d’Istria. Each glass of wine will be accompanied by a matching canapé.
The experience will last approximately 1. 5 hours in total.
Who it is aimed at
The experience is suitable for everyone, with no age restrictions.
The wine tasting is for adults only. Children who do not eat may take part in the experience free of charge (water or apple juice will be provided for them) ; there is no reduced price for those who do not drink alcohol.
The venue is accessible to people with reduced mobility and pushchairs, with the exception of the underground rooms, which are not accessible.

If you have made a fixed date reservation and the weather conditions are not suitable for carrying out the activity safely (according to the expert opinion of the guide), you will be refunded the full amount paid. The guide may suggest an alternative date or time for the activity. You are free to choose whether or not to accept these suggestions. If you are unable to reschedule, we will proceed with a full refund! If you have set the date of your Gift Voucher and bad weather has prevented the activity from taking place, the Voucher remains valid until the expiry date indicated on it.
