Get ready for a 'plunge' into the Ligurian wine tradition!
Visit the Bisson winery in Sestri Levante, the first in the world to use the sea as a natural cellar for its 'Abissi' sparkling wine. In this 1-hour experience, you will admire the production room, descend into the evocative underground cellar where the most precious wines sleep, and discover the genius behind this revolutionary oenological vision.
Finally, you will taste 3 Ligurian wines from the cellar accompanied by appetisers or a platter of cold meats and cheeses of your choice.
What we will do
The appointment is 10 minutes before the indicated time at the Cantina Bisson in Sestri Levante (GE) . We will be welcomed by our guide, ready to take us on this journey to discover the "Cantina degli Abissi".
We will begin in the production area, where we will see the modern steel barrels in which the wines rest. The guide will explain how the founder of the winery applied innovative winemaking techniques to 'resurrect' forgotten Ligurian grape varieties such as Bianchetta Genovese and Cimixià.
We will then move on to the Sala delle Volte, an evocative environment housing a magnificent 3000-litre aquarium. Here we will discover the history of the 'Abissi' sparkling wine, the first sparkling wine in the world to be aged on the seabed at a depth of 60 metres (not included in the tasting but purchasable on site) . In this room, we will admire the stainless steel cages that hold the bottles during the underwater ageing period.
We will then descend into the underground vault, where the bottles of Abissi and the company's precious passito wines rest.
It will then be tasting time: we will taste 3 Ligurian wines (selected by the sommelier according to availability) , accompanied by Taggiasca olives and taralli. Alternatively, you can add a seasonal platter of cold meats and cheeses by selecting the 'tasting + platter' option.
The experience will last about 1 hour in total.
Who it is aimed at
The experience is recommended for 18 years of age and above. Wine tasting is reserved for adults only. Any accompanying minors and astemics will be provided with non-alcoholic options on request and to be paid for according to on-site consumption.
The facility is not fully accessible to persons with mobility problems, however, you can contact the winery for specific requests in order to evaluate customised solutions.

The experience takes place all year round and is confirmed with a minimum of 2 participants.

If you have made a fixed date reservation and the weather conditions are not suitable for carrying out the activity safely (according to the expert opinion of the guide), you will be refunded the full amount paid. The guide may suggest an alternative date or time for the activity. You are free to choose whether or not to accept these suggestions. If you are unable to reschedule, we will proceed with a full refund! If you have set the date of your Gift Voucher and bad weather has prevented the activity from taking place, the Voucher remains valid until the expiry date indicated on it.
