Would you like to discover how one of the most authentic treasures of Tuscan cuisine is made? At this dairy in Capolona (AR), you can enjoy an authentic experience in close contact with local traditions.

You won’t just be tasting extraordinary cheeses: you’ll take part in a hands-on demonstration with the cheesemaker to discover all the secrets of processing locally sourced milk.

The day will round off with a cheese tasting, accompanied by honey, local jams, homemade bread and a lovely glass of wine!

What we will do

We’ll meet at 09: 30 at the Incani & Marcia Farm in Lorenzano, a hamlet of Capolona (AR), set against the backdrop of the beautiful Tuscan countryside. We’ll be welcomed by our guide, who’ll take us on a tour of the farm.

We’ll begin our tour by entering the cheese dairy, where locally sourced milk is transformed into cheese with passion every day. We’ll watch a practical demonstration of cheese-making lasting about an hour, during which the entire production process and the fascinating differences between the various types of milk will be explained to us.

After discovering how cheese is made, we’ll move on to the tastiest part: the tasting. We’ll sample a selection of cheeses that varies depending on the day’s production and the seasonality of the products. We’ll be able to enjoy fresh specialities such as raviggiolo, ricotta or classic Tuscan pecorino, as well as semi-matured, matured or flavoured options ( with chilli, herbs, truffle, pepper, or salted ricotta and sheep’s milk scamorza) .

The cheeses will be served with homemade bread, honey and jams from local producers, along with a glass of wine. At the end of the experience, anyone who wishes to do so can purchase the fresh produce directly on site.

The experience will last approximately 2 hours in total .
