In the hills of the Costa degli Etruschi, olive cultivation tells a 40-year love story for the land and biodiversity.

Take part in this oil tasting and tour of an organic oil mill in San Vincenzo, in the province of Livorno. At a splendid establishment awarded the 'chiocciola' (snail) prize by Slow Food Italy, you will discover the secrets of Tuscany's liquid gold.

A two-and-a-half hour experience between the olive grove overlooking the sea and a guided tasting with surprising food pairings!

What we will do

The appointment is at the appointed meeting point in San Vincenzo (LI) . Here we will make the acquaintance of the guide, as well as one of the producers who manage this organic farm with deep passion.

We will begin our activity with a pleasant guided walk among the olive trees on the estate, which has around 1, 200 plants belonging to no less than 18 Tuscan varieties, some of which are centuries old. Walking between the rows, we will learn to recognise the different cultivars and understand the importance of preserving local varieties, while enjoying a magnificent open view of the sea and the islands of the Tuscan archipelago.

We will then proceed to the beating heart of the facility, where the entire production cycle takes place: the company's small oil mill. Here we will follow a technical mini-lesson on tasting extra virgin olive oil, learning how to recognise a high quality one. We will also discover how the olives are pressed here just a few hours after harvesting, carefully separating each variety to maximise its aromas, flavours and nutritional properties.

Finally, we will sit at tables (set up outdoors or inside the estate depending on the season) for the most mouth-watering part. Guided by the producer, we will have a tasting of single-varietal oils, discovering through fun , targeted pairings (e. g. chickpea, legume or tomato puree) how each type of oil can transform and enhance a dish. We will end the experience on a sweet note with a small surprise dessert, specially designed to surprise the palate!

The activity will end after about 2½ hours with the possibility of purchasing the products tasted directly on site.

Who it is aimed at

The activity is open to all, with no age limit. Children under the age of 4 participate free of charge, while children up to the age of 12 can request a reduced rate to be agreed on the basis of on-site consumption.

The facility is accessible to wheelchair users and pushchairs, with the exception of the walk through the olive grove due to the characteristics of the farmland.
