We have found the best orecchiette pasta in the whole of Puglia.
Try them by taking part in our fresh pasta social workshop in Carpignano Salentino: you will be the guest of a social enterprise that supports young people with disabilities in the world of work, and they will teach you how to make fresh pasta with passion and skill.
An experience of over 2 hours, ending with a lunch of real goodness!
What we will do
The appointment is 10 minutes before the selected time at the meeting point in Carpignano Salentino (LE) . The experience takes place at a social enterprise that grows legumes and makes fresh pasta, under the banner of ethical production and social inclusion.
At the meeting point we will be welcomed by the owner of the social enterprise and his collaborators, young people with disabilities who have found a place where they can grow professionally (and not only) .
The experience will begin with a tour of the workshop: we will learn about legumes, cereals, and deepen our understanding of stone milling, one of the oldest methods for producing high quality flour. This part lasts about 30 minutes.
And before we know it, it will be time to get our hands into the pasta: following the teachings of the social enterprise students, we will learn how to make fresh pasta by hand. From orecchiette to maccheroncini, we will discover pasta shapes that have always been present on the tables of Apulian families. This part lasts about 1 hour.
Finally, we will all sit down together for lunch: we will eat a plate of fresh pasta, seasoned with legumes and other local ingredients; accompanying non-alcoholic and alcoholic drinks. And knowing that we have made the pasta, it will taste completely different!
The experience lasts a total of about two and a half hours.

The experience is suitable from 3 years of age. Children under the age of 18 may participate if not accompanied by an adult.

If you have made a fixed date reservation and the weather conditions are not suitable for carrying out the activity safely (according to the expert opinion of the guide), you will be refunded the full amount paid. The guide may suggest an alternative date or time for the activity. You are free to choose whether or not to accept these suggestions. If you are unable to reschedule, we will proceed with a full refund!
