Get ready to discover the wilder side of beer! Get to know Ca' del Brado in Rastignano (BO), a real 'Cantina Brassicola' where time slows down and nature takes its course between vats and wooden barrels.
You will explore a unique laboratory, where the raw material is transformed thanks to indigenous yeasts and long ageing, in a perfect bridge between the art of winemaking and beer culture.
A 1-hour visit with tasting during which you will discover what it means to create beers 'in the wild' and have a taste of them!
What we will do
The appointment is 10 minutes before 4 p. m. at the Ca' del Brado Brewery in Rastignano (BO) in the setting of the Savena valley.
We will be welcomed by the guide who will introduce us to the philosophy of this 'brasserie', explaining how the idea of combining the tradition of Italian coopers with the production of sour beers with character came about.
Our tour of the brewery will begin in the brewing room, the beating heart where the wort is created from raw materials selected in collaboration with local vintners and farmers.
We will then continue to the impressive barrel room, the area dedicated to fermentation and ageing in wood, where the beers rest for a long time to develop complex sensory profiles. Here the guide will reveal the secrets of the use of wild yeasts and bacteria, which make each batch a unique work of art.
During the tour, we will have 3 technical tastings of representative beers from the cellar, including wild and sour beers, which may include samples directly from the barrel or tastings of aged products.
At the end of the guided tour, we will have a reserved table in the brewery's tap room, where we can relax and continue drinking and enjoying the convivial atmosphere of this craft brewery.
The experience will last a total of 1 hour.

The beer tasting is for adults only. Any accompanying minors and astemious persons may participate in the experience as 'chaperones' free of charge.
The facility is accessible for wheelchair users and pushchairs.

The experience takes place all year round on Saturdays.
At the end of the tour, additional products can be consumed in the tap room.
Sour beers, due to their production nature, are often suitable for those with mild gluten or yeast intolerances.
Dogs are allowed if kept on a leash.
