There is no one more rebellious and Valtellinese than him. We are talking about Storico Ribelle, Italy's first Slow Food Presidium product.
The bitto that said 'no' to the DOP to remain faithful to the historical method and that today rests in the Casèra di Gerola Alta, ready to become the best aged cheese in the world.
A traditional lunch awaits you here, where every ingredient tells the story of the mountains: polenta taragna, artisanal cold meats and cheeses, Valtellina bisciola and (of course) a vertical tasting of three vintages of Storico Ribelle!
What we will do
The meeting point is 15 minutes before 12 noon at the Centro del Bitto - Storico Ribelle in Gerola Alta (SO), in the Orobie Valtellinesi Park.
Once all the participants have gathered, our guide will welcome us and lead us into the casera, or maturing cellar, where around 3000 wheels of Storico Ribelle rest.
The casera stands on the bank of the Bitto stream, right in the area where this cheese was born, and benefits from an ingenious natural cooling system thanks to the icy mountain waters.
After the visit, it will be time to sit down for lunch. The menu includes polenta taragna mantecata with butter and Storico Ribelle, served with cooked and raw meats and artisan cheeses , including three vintages of Storico Ribelle Presidio Slow Food and a typical Valtellina dessert . Everything will be accompanied by a glass of Valtellina Superiore DOCG.
The experience will last about 2 hours in total.

If you have made a fixed date reservation and the weather conditions are not suitable for carrying out the activity safely (according to the expert opinion of the guide), you will be refunded the full amount paid. The guide may suggest an alternative date or time for the activity. You are free to choose whether or not to accept these suggestions. If you are unable to reschedule, we will proceed with a full refund! If you have set the date of your Gift Voucher and bad weather has prevented the activity from taking place, the Voucher remains valid until the expiry date indicated on it.
If I cancel the reservation, can I get a full refund?
For this activity, the cancellation policy is flexible. You get a full refund if you cancel within 5 days from the activity start date. Within 4 and 3 days from the activity start date you will get a 50% refund. You can find the full policies in the Cancellation Policy section.
