Staying true to oneself always pays off: Storico Ribelle, Italy's first ever Slow Food Presidium Alpine cheese , teaches us this.
Thanks to a fascinating guided tour in the cheese dairy, you will discover the historical production method handed down by the mountain cheesemakers, and how this very discipline anchored in tradition makes it inimitable.
And then. .. the moment you have been waiting for: a vertical tasting with three different vintages, accompanied by an excellent glass of Valtellina Superiore!
What we will do
The appointment is at the selected time at the Centro del Bitto - Storico Ribelle in Gerola Alta (SO), immersed in the Parco delle Orobie Valtellinesi.
Once all participants have gathered, our guide will welcome us and lead us into the casera, along the maturing rooms, where the treasure of this reality rests: 3000 wheels of Storico Ribelle.
The casera (i. e. the cellar) is built on the bank of the Bitto stream, in the very area where this cheese originated, and benefits from an ingenious natural cooling system thanks to the icy waters of the mountain.
After this immersion in the world of Storico Ribelle, it will be time for the tasting. We will taste three different vintages of this extraordinary Slow Food Presidium cheese, accompanied by a glass of Valtellina Superiore DOCG.
Thanks to the details provided by our guide, we will understand how the same traditional method always produces different results, making each tasting a unique and unrepeatable sensory experience.
The experience will last about 1 hour in total.
